classic, artisinal Cava, but not "Cava."
Nestled in the foothills of the d'Ordal mountains in the eastern Penedès, AT Roca joined the DO Classic Penedès to participate in a movement to differentiate their wines from the ever-growing Cava region. Vigneron Agustí Torello Roca studied winemaking in Tarragona before apprenticing with one of Champagne's pioneers of organic farming. With raised standards, Agustí has made a name for himself in the Penedès region.
The grapes sourced for Classic Penedès Reserva are grown on a variety of soils in an attempt to exemplify the overall Penedès terroir, with 50% Macabeu, 30% Xarel-lo, and 20% Parellada. This wine has a primary fermentation in stainless steel with wild yeasts before aging on the lees for a minimum of 20 months before bottling with zero dosage.
