Gabrio Bini, formerly an eccentric architect in Milan, Bini is now an eccentric winemaker on the small island of Pantelleria known for its volcanic soils, hot springs, and capers. Working only with native grape varietals, he ferments naturally with wild yeasts in buried clay amphorae.
Bini's Zibbibo Bianco is made from 60 year old Zibbibo vines grown on volcanic, sandy soil. Harvested by hand, the grapes are de-stemmed, pressed gently with skin maceration and 20 days of spontaneous fermentation in terracotta jars before aging 3 months in amphora. Unfined, unfiltered, no SO2 added.
