80% of the fruit was fermented on it skins for about two weeks before being pressed off into neutral oak barrels; 20% of the fruit was pressed off into a concrete egg shaped tank to ferment and rest. Upon blending the two, "Skin & Concrete Egg" was born for our enjoyment. Unfined, unfiltered, minimal sulfites.
